Sapskia, a mix between sap (juice) and Saskia (Dutch girl name), is a concept for an interactive juice bar. It is created as a healthcare solution to close the gap between fast food and healthy alternatives. Customers can create their own juices by choosing from a wide range of ingredients, which vary from vegetables and fruits to herbs, spices and nuts. A juice can be created via a mobile application or in store via a touch-panel. The concept has an online (application) and offline (store) scene. The concept will be further explained through descriptions of the product itself, the application and the business model.
The online part of Sapskia takes place within the application on mobile devices such as smartphones, tablets and on touch panels in store locations.
The mobile application has multiple advantages against the traditional order method. The user can order ahead of time and collect the juice when it is ready. Juices can be saved and recalled at any moment, so the customer doesn’t need to remember their recipe.
The user creates a juice through the mobile application or using one of the touch-panels at the store location. The user can choose from a wide variety of vegetables, fruits, herbs, spices and the so-called 'super-foods'. The user can specify the desired quantity for each ingredient.

The user can see the total nutritional values of the created juice in the overview screen. When the user is satisfied with his or her choice, a name and a description can be added to the product, which personalizes the process. Juice recipes can be saved on the user's profile, so they can later be viewed, reused and shared with friends.
When selecting an existing recipe, the user can choose between a standard Sapskia recipe (created by Sapskia) or a recipe from an existing user.
The user has their own profile where he or she can save juice recipes and share recipes with friends and the community. Payment methods can be added to the profile to make payments in store faster and easier. The application learns from the user's behaviour and knows what kind of ingredients the user likes and dislikes. Using these data, the stores can make assumptions on which ingredients and how much of each ingredient to have in stock.
The juice overview page shows every juice recipe inside the application. There are three different sections:
Since some ingredients are thicker than others (a banana has a thicker substance than an apple), the application works with ingredient characteristics. Each ingredient has their own thickness, structure and health score. When creating the juice, the user always has accurate information available about the total score of the selected ingredients.
